Seminole Hard Rock Hotel & Casino Tampa officially rolls out their 2020 wine and spirits dinner series with more menu offerings in their fine dining restaurants. The series begins January 15th at Council Oak Steaks & Seafood, where they’ll collaborate with vintage prestige champagne Dom Pérignon. The 36-seat exclusive event begins at 6pm with a menu highlighting Council Oak’s meat and seafood selections. Creative Culinary Director Frank Anderson, chef de cuisine Luis Rosales, and executive butcher Walter Apfelbaum developed the menu to pair perfectly with the champagne. Tickets for the night are $250 per person.

The first course of the night is American Caviar served with the traditional sides and Gaufrette potato. Next, guests taste a Skuna Bay Salmon Tataki with flavors of yuzu viniagrette, orange, almond, mint, and chili oil. Between meals, a Meyer Lemon Granita with shiso leaves refreshes the palate for the third course, a Turf and Surf of Wagyu strip loin and Maine lobster tail with a twice-baked potato, shaved asparagus, and Beurre Blanc. A Sticky Toffee Pudding with whipped créme fraiche and Heath bar crumble is served as dessert.

Cipresso, the newly opened Italian-American trattoria, welcomes guest to a four-course Super Tuscan wine dinner. Frank Anderson and Cipresso chef de cuisine Joseph Caratozzolo create a menu that goes with the restaurant’s traditional meals paired with Tuscan wines. Tickets are $125 per person.

The 16-seat intimate dinner begins with Sicilian Tuna Tartare with avocado, balsamic, pistachio, and chili. Ravioli al’ Novo with a house-made ricotta, Jidori yolk, sage brown butter, and a delicate squash. Chinoto Granita with orange zest is served to cleanse the palate. The main course of the night are Colorado Lamb Chops with braised escarole, butter beans, and a mint salsa verde. The dinner ends with La Famiglia, a flight of 3 housemade gelatos with a tasting of Galliano.
