The Ritz-Carlton Orlando Grande Lakes appoints new chef de cuisine of Knife & Spoon

More good news for The Ritz-Carlton Orlando, Grande Lakes! After its one-Michelin star win and Food & Wine feature, Knife & Spoon at The Ritz-Carlton Orlando, Grande Lakes announced recently Chef Tyler Kineman as new chef de cuisine. He’ll be in charge of daily culinary operations and lead the creative process and menu development from exclusive wine dinners and private events to menu changes alongside Chef John Tesar.

“There’s not much I love more than delighting guests and telling a story through the food I create, and I am thrilled that I can do that at Knife & Spoon,” says chef Kineman. “To lead a Michelin-starred restaurant is a dream of any chef, and I am looking forward to working with the talented team to continue raising the bar and building on the restaurant’s incredible accolades and recognition.”

Chef Kineman previously worked as banquet chef for the hotel and was opening sous chef at Knife & Spoon when it opened in 2020. He’s spent a good bit of his career with the Ritz-Carlton brand including as chef de partie at The Ritz-Carlton Washington, D.C.

Soooo, a bit about Knife & Spoon: the menu is made with critically acclaimed dishes featuring locally sourced ingredients like freshly caught salmon, dry-aged steaks, and seasonal produce. Chef Kineman’s faves are the Hamachi crudo, King Crab Scampi, and Pappardelle Bolognese. Some popular dishes are the 45-day dry-aged New York strip. Kineman recommends the Kimchi-creamed spinach and cultivated mushrooms (sourced from Tallahassee’s Play of Sunlight) as sides to accompany the many dishes.

Also, in response to tremendous support, the restaurant expands its days of operation to open daily between 5:30 p.m.-10 p.m. (bar and lounge close an hour later at 11 p.m) beginning Monday, Sept. 19.
