Conrad Orlando’s rooftop restaurant Ceiba now open

Newly-open resort Conrad Orlando announces the opening of the hotel’s highly anticipated rooftop dining option Ceiba. The restaurant shows off an expression of Mexican cooking while paying homage to ingredients telling the story of Mexico’s treasured dishes.

“Our commitment to authenticity and honoring the culinary tradition of Mexico through our modern take on cuisine offers a dining experience unlike any other,” says Joshua Murray, director of food and beverage, Conrad Orlando. “We’re excited to have locals and guests alike enjoy their journey at Ceiba, from the tortillas crafted in-house every day and dishes brimming with aromatic spices to the curated cocktail program using quality, agave-based spirits. It’s truly an experience that can’t be missed while in Orlando, especially thanks to its expansive views of the sunset over Evermore Bay and the nightly fireworks from our nearby parks.”

Guests can expect a variety of spices, beans, and premium meat cuts for the “botanas”, or snacks to start the meal, hearty “platos fuertes”, or main dishes, are served alongside several taco selections like Al Pastor, Quesabirria with salsas including a smoky Molcajete or zingy X’nipek. Other dishes on the menu include traditional Oaxacan snack Tetela de Tinga, Sopes de Chorizo, and shareables Barbacoa de Cordero and Pescado Zarandeado. Desserts include Maiz, made from freeze-dried sweet corn and a yellow chocolate glaze, and the Taco Maracuja, made form passion fruit jelly, passion fruit creameux and white chocolate grape seed crumble within a passion fruit chocolate taco shell.

Beverage Director Miguel Angel Sanchez Borrego created a series of drinks that pair well with the food offerings. Expect a selection of non-alcoholic drinks, an extensive Mexican and South American wine list and an artisanal agave tasting menu. Classic cocktails are made using agave spirits while non-agave based drinks get the Mexican touch.

The unique “dust cutter” menu, featuring drinks made with whiskey, bourbon, and scotch, provides other spirit options to drinkers. For example, the Piñata Margarita, made with Komos Añejo Cristalino Tequila, pineapple, citrus, orgeat and Mezcal Pearls.
